Soup to reduce bad cholesterol

Pumpkin Soup for Blood Sugar, Cholesterol & Heart Health

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 red bell pepper, chopped

  • 1 tsp grated ginger

  • 1 tsp ground cumin

  • ½ tsp paprika

  • 4 cups diced pumpkin

  • 4 cups low-sodium broth (chicken or veggie)

  • ½ cup coconut milk

  • Salt & pepper to taste

Instructions:

  1. Heat olive oil in a pot. Sauté onion until soft.

  2. Add garlic, bell pepper, ginger, cumin, and paprika. Cook 2 minutes.

  3. Stir in pumpkin and broth. Boil, then simmer 20 mins until tender.

  4. Add coconut milk, season, and blend if desired.

Great for managing blood sugar, cholesterol, anemia, and heart health.
